This tasting menu features two of Chef Jay Park’s dishes from the 2026 Canadian Culinary Championship: Jay Park’s Journey and the Mystery Wine Dish. Each course is offered with optional wine pairings.

CANADA’S CULINARY CHAMPIONSHIP
Chef Jay Park earned Gold at the 2026 Canadian Culinary Championship, held in Ottawa on January 30 and 31.
The competition brings together 10 of Canada’s top chefs, each a regional gold medalist, to compete across three demanding challenges that test creativity, technical precision, and composure under pressure.
Chef Park advanced through:
Mystery Wine, where chefs created a dish to complement an unknown bottle using local ingredients under strict constraints.
Black Box, a one-hour challenge requiring two dishes from surprise ingredients.
Grand Finale, where chefs present a signature dish developed over months of preparation.
His Grand Finale creation, Jay Park’s Journey, ultimately earned the championship title.
The dish explores the depth and versatility of Wingtat Canada chicken through a series of thoughtful preparations. Each element reflects Chef Park’s technique, influences, and personal story.
