Nearly two decades after first cooking side by side at Restaurant Daniel in New York City, Chefs Roger Ma and Wilfrid Hocquet reunite in Vancouver to present an exclusive collaborative dinner, bringing their shared foundations in modern French cuisine full circle through globally inspired, contemporary cooking.
A One-Night Collaborative Dining Experience
This five-course dinner reflects the chefs’ journeys across Michelin-starred kitchens and international dining destinations. Guests will experience a refined, thoughtfully paced menu that blends classical technique with modern sensibility, interpreted through Boulevard’s West Coast lens.
Menu Highlights
The menu opens with luxurious canapés for the table, featuring truffle-forward bites, honey mussels gratinée, and refined tartares. Standout dishes include Chef Wilfrid Hocquet’s signature black truffle pithivier, alongside elegant seafood preparations and richly flavoured main courses.
The experience concludes with a shared dessert course, uniting Chef Wilfrid’s modern bistro influence with our very own Executive Pastry Chef Kenta Takahashi.
Wine pairings curated by Boulevard’s sommelier team are available for an additional charge.
